Columbiana Carrot Bread

Columbiana Carrot Bread - served often at church socials, this popular recipe will make one loaf of a delicious favorite. Can be frozen in an airtight bag to keep longer if desired.

Ingredients
- 1 cup of sugar
- 1/2 teaspoon of salt
- 3/4 cup of vegetable oil
- 1 teaspoon of cinnamon
- 2 eggs, beaten
- 1 cup of grated carrots
- 1 1/2 cups of flour
- 1 cup of chopped pecans (optional)
- 1 teaspoon of soda

Directions
- Thoroughly mix the sugar, oil, and the eggs in a mixing bowl.
- Add the flour, salt, soda, cinnamon, carrots, and nuts.
- Pour the mixture into a floured loaf pan (9 by 5 by 3 inches.)
- Bake in oven at 325 degrees for one hour or until done.
- Allow to cool.
