Montevallo Meat Balls

Montevallo Meat Balls in Buttermilk Sauce. Now everyone knows that Montevallo is a little more highbrowed than the rest of the county since they have the University right there in the middle of town. These probably aren't the kind of meat balls your granny made, but when did anything cooked with buttermilk taste bad anyway? The buttermilk sauce is just great poured over home made mashed potatoes too.

Ingredients
- 1 1/2 pounds of ground beef (or chuck for lower fat)
- 1 small onion, chopped fine
- 3 tablespoons of chopped green peppers
- 1/3 cup of celery, sliced.
- 1 cup of cooked white rice
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 large egg
- 1 can of mushroom soup (10 1/2 ounces)
- 1 1/4 cup of buttermilk
- 1 jar of mushroom stems and pieces (2 ounces)

Directions
- In a large bowl, add the ground beef, chopped onion, green pepper, celery, rice, egg, salt, and pepper.
- Work mixture with hands until it is well mixed.
- Divide mixture into 12 equal portions and roll each portion into a ball.
- Place the balls into a well greased two quart casserole dish.
- In a bowl, beat the soup, buttermilk, and the liquid from the mushroom jar until the mixture is smooth.
- Pour this over the meatballs and add the mushrooms.
- Bake uncovered in oven at 350 degrees for one hour.
Makes 6 servings.
